My mom's best friend is married to a native of Trinidad. I remember as a kid, that he would bring these dee-licious burrito looking things to eat called roti. It was filled with curried chicken and potatoes and perfectly seasoned. Since I can't find anyplace locally that has them, I've tried to come as close as I could. There is no way I would even attempt to make the roti, or light bread that holds the goodies. I just used pita bread. This was so easy and very filling, not to mention that they taste amazing. I didn't follow a recipe, I just kind of made my own.


What you'll need:
Makes approximately 6 servings
1 medium onion roughly chopped
2 1/2 cups chicken broth
3 tablespoons curry
5 small Russett potatoes peeled and cubed
1 lb uncooked boneless skinless chicken tenders, cut into chunks
2 tablespoons vegetable oil
Salt and pepper to taste
Pitas
How to do it:
In a large skillet over medium heat, add the vegetable oil to the pan. Add onions and cook until the onions become translucent, stirring often. Add the curry powder and continue to cook for about 2 minutes stirring constantly. Next, add the chicken and stir continuously for another 3 minutes or until the pieces of chicken are no longer pink on the outside. Finally pour in the chicken broth and add the potatoes. Stir to mix, reduce heat to low, and cover. Cook until potatoes are tender. Serve alone or on pitas. Amazing good!
(As a side note, I prefer a thicker broth, so at the last minute I mixed a tablespoon of cornstarch with a half cup of cold water and added it to the pan to thicken the broth. You can skip this step if you wish.)

Yum sounds really good! I made a Trinidad version of stewed chicken, it turned out to be really good. It contain coconut milk and brown sugar mixed with onions and scallions. My husband loved it.
